Recipe: My Go-To 3 minute Breakfast for Busy Mornings

Oatmeal and Egg Whites

I’ve enjoyed making this for years. It’s my go to healthy breakfast that I’ve loved even before being married with children. It’s wonderful that now my kids love it too!

Oatmeal is a healthy and is a good source of complex carbohydrates that your body uses as fuel. I prefer steel cut oats with their rougher texture, but regular oats work well too.

Directions:

Put 1 cup oatmeal in a microwave safe dish, add 1 egg white, top with water so that 1/2 inch of water is over the oatmeal. Stir. Microwave uncovered on high for 3o seconds. Stir. Microwave again for 30 seconds. You must stir in between the 30 second intervals or the oatmeal will explode in your microwave.

Top with your choice of delicious textures and tastes:  non fat plain yogurt, low sugar applesauce, top with crunchy almonds, walnuts, berries, dried cranberries, raisins….to make it have more taste and texture and protein. Enjoy!

I always have a dozen eggs and a dozen hard boiled eggs in the refrigerator at all times. Hard boiled eggs are easy protein on the go. I just eat the egg whites. It’s an easy way to add protein to your lunch or mid day snack. I give the dogs the yolks. They love them.

The photo below is of my beloved dalmation “Flex” who passed away at 14, I loved her so. She was a “cast member” on Kiana’s Flex Appeal ESPN and ran with us on the beach. I miss her so. The black dog we have now, is a mix lab / shepard/chow mix; I rescued from a shelter when he was a puppy. He was one of 9 puppies abandoned on the freeway underpass. He is a wonderful loving dog and so great with the kids, too. He is 12. We just rescued another dog named Kona (not pictured because he doesn’t stand still long enough for me to take a photo!)
